Coco muffin


之前都是用以廉价的muffin cup, 去逛逛bakery shop ,决定买比较像样的这款cup,
可是烘的时间比较长。

Coco muffin

Butter  -  110gm  , Sugar - 60gm  , Low protein flour - 110gm , Baking powder - 1 teaspoon , Coco powder - 2 tablespoon , Egg - 2 

For topping - white chocolate 


Method:-

.1. Beat butter & sugar until soft peaks form. Add egg and add all ingredients. Mix well. Add in into moulds lined with papaer cups.

2. Bake in oven at 180C for 25 minutes.

Tuna Heart Bun

买了tuna 已有几个月,爱心bun 终于出炉了,不过我用了tuna mayonnaise , 有一点点酸,小孩不太喜欢,拿他没办法。。。。。


Ingredient:-

汤种:

Bread flour - 20gm

Hot water - 100gm

Main dough:-

Bread flour - 250gm ,汤种-85gm , cold water -80gm, salt -1/2 teaspoon, instand yeast - 1 teaspoon, sugar 40gm, butter - 30gm, egg -1, milk powder - 20gm.

Topping:-

Mayannaise & pasley

Method:-

Cheese Stick






今天从早上5点30分忙到晚上10点30分,就有做不完的工作,明天的早餐还没有着落,就做了cheese stick給家人享用。小孩超喜欢的,因为有放他们所喜爱的白糖嘛!

Ingredient:-

(A)汤中:-

Hot Water - 33gm

High protein flour - 30gm

Sugar - 1 tbspoon

(B) Main dough:-

High protein flour - 200gm

Sugar - 3tbspoon

Egg - 25gm

Cold Water - 100gm

汤种 - 20gm

Instand yeast - 1 teaspoon

Butter -20gm
Method:-

1. Seived (a) & add in hot water(more than 98 degree), set aside,
2. Combine all dry ingredients except butter, slowly add in cold water & egg on low speed to form a dough for 5 minutes.
3. Add in butter, mix to form a smooth and elastic dough. It takes about 15-20 minutes.
4. Mould them again into long shape and arrange on a greased baking tray. Lastly, let them set to rise for 1 hours or more.
5. Brush with egg wash and sprinkle with shredded cheese & sugar.
6. Bake in a preheated oven at 200C for about 12-15 minutes until golden brown.

Cheese Baked with Rice



Cheese rice before bake...
Ingredient:-

Chinese Sausage - 2 (cut into small pcs)

Mushroom - 6 (from can)

3 pips garlic

Shallots (big) - 1/2 pc

Pineapple - 6 pcs (cut into small pcs)

Rice - 1 cup

Seasoning:-

Salt - 1/4 teaspoon , fresh milk - 150ml, butter - 2tbspoon, pasley - little, pepper - 1/8 teaspoon

Topping.- Cheese powder & Mozarella cheese

Method: - 

1. Melt butter, add in  shallot, garlic , mushroom till aromatice, add in rice , fry well, about a minute, add in salt, pepper & pasley well combined, lastly add in some water on the rice, cook around 8 minutes .

2. Place (1) into a deep casserole. Add in the cheese powder & mozarella cheese for sprinkling. Bake rice casserole in a oven at 230C for 5 minutes, until the cheese turn brown.  Ready to serve  !!

Fried Chicken Wing

Ingredient:-

(A)    Fresh Chicken Wing

(B)    Salt, peppeer & 香料

(C)   Adabi powder - 1 packet

(D)   Egg- 1

Method:-

1. Marinate chicken with salt, pepper & 香料 more than 1 hours.

2. Before deep fry add in(D) , and apply (C) until the skin turn brown.

wholemeal bread



Dough ingredient:

A. High protein flour - 500gm

     Brown sugar - 30gm

     Salt - 1 teaspoon

     Milk powder - 20gm 

B.  Instand yeast - 1 1/2 teaspoon

C.  Ice Water - 250gm

D.  Oat - 60gm

E.   Butter - 40gm

F.   Raisin

G.  Egg - 1

Method:-

1. Mix flour and yeast on low speed. Add in salt sugar, milk powder and cold water & oat. Mix on low speed for 1 minute. Continue to mix on medium speed for 5 minutes.

2. Add in butter . Mix for another 15 minutes until the dough becomes smooth and elastic.

3.  Ferment for 1 hrs or more. Scale the dough at 200gm each. Shape into balls. Ferment for 15 minutes.

4.  Mould the dough again and add in raisin and place on a greased baking tray.

5.  Let them set to rise for 1 hours or more until they rise to double size .

6.  Bake in a preheated oven at 180C for 25 minutes until well baked.

Classic Cheese Cake


Ingredient:-

Butter - 250gm

Sugar - 150gm

Egg - 5

Baking powder - 1 1/2 teaspoon

Low protein flour - 250gm

Chedder cheese - 150gm

Method:-

1 Sieved flour & baking powder.

2. Beat butter & sugar until creamy, add in egg one by one, mix well, 

3. Add in flour & grated cheese , until all well-combined, 

4. Bake for 150C for 45 minutes.

Ham Pizza

yummy yummy....

Ingredient:-

High protein flour - 250gm

Low protein flour - 50gm

Salt - 1/3 teaspoon

Sugar - 20gm

Olive Oil - 20gm

Egg - 1

Milk or water - 150gm

Instant yeast - 1/2 teaspoon

Filling:-

Fresh mushoom, ham(cut into small pcs), parmesan cheese, pineapple rings from a can, garlic, tomato paste, mazarella cheese  .

Method:

1 . Dissolve instand yeast in the lukewarm water. Mix all the ingredients , lastly add in olive oil , knead into a dough, leave to proof for 1 hrs or more. Flatten dough, leave on two greased moulds. Bake in for 5 mins. Remove it and apply tomato paste over pizza base, place in all the filling ingredients on the top , rebake for another 20 minutes.  Ready to serve!

Ham Bun

Ham Bun

This is the recipe for the above bun:-

Bun dough:-

High protain flour - 330gm

Salt - 1/2 teaspoon

milk powder - 1 1/2 tablespoon

Sugar - 30gm

Cold water - 120ml

Instand yeast - 1 teaspoon

Butter - 40gm

Ham - 10pcs

For glazing: -
egg yolk beaten

Method:-

Combine all ingredient together in a mixer except butter. Slowly add in the cold water to become a dough. Add in butter until a soft dough is formed. 

Cover dough with a damp cloth, leave it and let it rise in a warm place for 1 hrs or more or until double in size. Scale at 50gm each.

Take one piece of small dough. Flatten dough and roll into a long shape. Pleace in one ham and wrap dough around it. Make five slits on the exterior side and join both ends to form a flower blossom. Do the same with the remaining dough portions. Place buns on a greased baking tray and wait for second rising, taking 45 mins or more.

Once doubled in bulk, brush with egg wash and bake in a preheated oven at 180C for 15-20 minutes. Ready to serve!
